Keep chilies fresh for months with this simple method — they’ll stay as vibrant and crisp as the day you picked them

Keeping chilies fresh can be challenging because we only use a small amount each day, so a single purchase can last weeks. However, storing them in the refrigerator often causes them to dry out, lose moisture, or rot. Sometimes you forget to buy more, or you purchase just a small amount and end up wasting what you don’t finish. Knowing how to store chilies properly not only saves money but also ensures you always have them on hand when you need them.

Here’s how to keep chilies fresh for a long time:


1. Choose the right chilies

To store chilies for an extended period, start with high-quality ones. Choose chilies that are fresh, brightly colored, firm, and smooth—not wrinkled. Look for thick, green stems and fruits that feel firm and full of moisture.


2. Steps to keep chilies fresh using cooking oil and a plastic bottle

Step 1: Make sure the chilies are completely dry

After buying the chilies, spread them out in a basket or tray and let them air-dry until no moisture remains on the skin. Avoid washing them before storage—water on the stem or the skin removes the natural protective layer and causes them to spoil faster. Remove any damaged or rotten chilies.

Step 2: Trim the stems

Cut the stems shorter if they are long. Keep only the small part attached to the fruit. Do not remove the entire stem, as it creates an opening where bacteria can enter. Long stems may also scratch each other, causing the chilies to spoil more quickly.

Step 3: Coat the chilies lightly with cooking oil and store them in a plastic bottle

Add just enough cooking oil to lightly coat the chilies. The oil helps retain moisture, prevents dehydration, and acts as a natural preservative.

Place the chilies into clean, dry plastic bottles—such as empty water bottles—seal tightly, and store them in the refrigerator. With this method, chilies stay fresh for up to six months without drying out or rotting. The bottle helps prevent moisture loss, keeping the chilies firm and vibrant for 1–2 months in the fridge.


3. Storing chilies in the freezer

Step 1: Sort the chilies

Remove any damaged or rotten chilies so they don’t affect the rest.

Step 2: Remove the stems

For freezer storage, you can remove all the stems to save space. Then wash the chilies and let them dry completely.

Step 3: Place them in ziplock bags

Put the dried chilies into food-grade ziplock bags or airtight containers, then place them in the freezer. Frozen chilies can stay fresh for up to a year.
However, once thawed, they may be softer and should be used immediately.
