Once it was halfway cooked, I had to scoop out some water, cover the pot, and continue cooking over a low flame so the steam could finish the job. It required attention, patience, and a bit of experience to get it right.
Nowadays, with the development of modern technology, cooking rice has become incredibly easy. All we need to do is rinse the rice, put it in the rice cooker, add water, press a button, and within half an hour, steaming hot rice is ready. It’s fast, convenient, and effortless. However, even though cooking rice in a rice cooker seems simple, not everyone knows the secret to making it soft, fragrant, and perfectly textured.
Most people just add water to the rice and start cooking. But that’s not enough! To achieve rice that is soft, shiny, and deliciously aromatic, you only need to add two extra ingredients. Over the years, whenever friends asked me, “Why does your rice taste so good?”, I always shared this little trick with them — and every single one of them agreed it really works.
Step 1: Rinse the Rice Properly
Many people tend to rinse rice by scrubbing it quickly several times until the water becomes clear. However, doing this can wash away many nutrients and aromatic compounds that naturally coat the rice grains. This is why the cooked rice often ends up bland or lacking that signature fragrance.
The proper way is to gently swirl the rice in water once, lightly rubbing it with your hands, then rinse it again under clean running water. This helps remove excess starch and dust while keeping the natural flavor intact.
Step 2: Soak the Rice
After rinsing, soak the rice in water for 15 to 20 minutes. This step allows the grains to absorb moisture evenly, making the cooked rice softer and fluffier. It also enhances the natural aroma of the rice, allowing it to blend harmoniously with the water during cooking.
However, avoid soaking for too long — soaking for more than 30 minutes can cause the grains to lose their texture and become mushy once cooked.
Step 3: Water-to-Rice Ratio
The water ratio is crucial for perfect rice. If you want rice that’s tender but not sticky, use a ratio of 1 part rice to 1.2 parts water. Of course, this may vary slightly depending on the type of rice you use — jasmine rice, for example, may require a little less water, while brown rice or sticky rice may need a bit more.
A good tip is to use your index finger: when the rice is leveled in the pot, the water should reach about one knuckle above the rice surface.
Step 4: The Two Secret Ingredients
To make rice fragrant, soft, and glossy, add three drops of white vinegar and half a teaspoon of peanut oil before turning on the rice cooker.
The mild acidity of vinegar slightly alters the starch structure, making the grains softer and preventing them from sticking together. The oil, on the other hand, gives the rice a delicate aroma and a beautiful, shiny appearance.
Be sure not to use soybean oil, canola oil, or other oils with strong odors. If available, a spoonful of coconut oil is an even better choice — it adds a pleasant, subtle fragrance that pairs wonderfully with many Asian dishes.
Step 5: Let the Rice Rest
After the rice cooker switches to “warm” mode, resist the urge to open the lid immediately. Instead, let the rice rest for 5 to 10 minutes. This allows the steam to redistribute evenly, helping every grain finish cooking and absorb the remaining aroma.
When you finally open the lid, you’ll be greeted by a wonderful cloud of fragrant steam and perfectly cooked, fluffy rice — soft yet distinct in every grain.
