Instructions:

Prepare the Carrots: Cut the carrots into small pieces and place them into a small saucepan. Add enough water to cover the carrots completely.

Cook the Carrots: Cook over medium heat. Once the water starts boiling, add the ginger and continue boiling until the carrots are soft.

Strain: Strain the mixture through a fine mesh strainer into a large bowl, making sure to save the water.

Blend: Blend the carrots and ginger until smooth.

Add Honey: Once the carrot mixture is lukewarm, add honey and stir until it dissolves.
