– 1 bowl of vinegar
- 2/3 cup white sugar
- 1 bowl of good quality fish sauce
– 2 bowls of boiled water (cooled), 2 liters of plain water
– Small bowl of rice water
- 1 tablespoon of fine salt
- 1 ginger root
- 4 chili peppers

Step 1: Soak the onions in rice water overnight to make the pickled onions crispier.
Step 2: Dissolve salt in 2 liters of water. After cutting off the roots and peeling each onion, immediately put it into the prepared salt water. Then rinse it briefly, drain it in a colander, and rinse it two more times to ensure it is completely clean and then let it dry.
Step 3: The most important element in making delicious pickled onions is the marinade. Mix fish sauce, sugar, vinegar, and water in the following proportions: 1 bowl of fish sauce, 2/3 bowl of sugar, 1 bowl of vinegar, and 2 bowls of boiling water in a large pot; stir well until all ingredients are combined. Next, put the mixture into a pot, bring to a boil, and let it cool completely.
Step 4: Arrange the washed, dried, and thinly sliced onions and chili peppers alternately in the jar.
Step 5: Pour the mixture of fish sauce, sugar, vinegar, and water into the jar of pickled onions. The fish sauce should be about 5cm higher than the onions. If you see the onions floating on top, use a bamboo stick to hold them down.
