The difference between dark green and light green luffa
By looking at the color, you can tell how tasty the luffa will be. Luffa with dark green skin is usually more mature. They grow longer on the vine, so they tend to be larger and longer compared to lighter green luffa.
Dark green luffa and light green luffa also differ in flavor. Dark green luffa, being older, usually tastes richer and sweeter and contains more nutrients. However, it also tends to be fibrous. This type is suitable for soups and stir-fried dishes.
Light green luffa is usually younger and harvested earlier. They are smaller, less fibrous, and taste lighter and more refreshing.
Tips for Choosing Fresh, Tasty Luffa
1. Check the stem
As with all vegetables, pay attention to the stem. If the stem is still fresh, green, and oozing sap without darkening, it means the luffa was freshly picked and will be tasty. Avoid luffa with blackened or shriveled stems, as these are old and fibrous.
2. Observe the skin patterns
The surface of luffa has ridges. Smooth, clearly spaced ridges indicate freshness and the right level of maturity for good flavor. In contrast, wrinkled ridges mean the luffa is overripe and less tasty.
3. Check the thickness of the skin
Choose luffa with moderately thick, smooth skin. Avoid fruits with too rough or uneven skin. Medium-length luffa (not too short or too long) is usually best.
4. Test its freshness by pressing
Gently press the tip of the luffa. If it feels firm and elastic, the luffa is fresh. If it feels soft or squishy, it has either been stored too long or is overripe — in both cases, it won’t taste good anymore.
