Pea Shoots
According to nutrition experts, pea shoots are very rich in potassium, low in sodium, and contain an exceptionally high amount of calcium.
Moreover, this vegetable is also low in oxalic acid. Regular consumption helps clear heat from the body, reduce internal inflammation, nourish the liver, brighten the eyes, enrich the blood, detoxify, and promote efficient metabolism.
In addition, pea shoots contain high levels of nutrients such as vitamins A and C, calcium, phosphorus, and antioxidants that support detoxification and slow down aging.
Pea shoots are delicious but should be purchased when harvested in the morning, as this is when they are at their freshest and most nutrient-dense. They thrive in cool mountainous regions such as Ha Giang, Yen Bai, and Lao Cai.

Dish: Pea Shoot and Egg Soup
Ingredients:
Pea shoots, eggs, salt, minced shallots, dried shrimp, dried vermicelli, sesame oil, cooking oil.
Instructions:
– Wash the pea shoots thoroughly and remove any tough stems. Add a little flour and clean water, and soak for a while to help remove impurities and tiny insect eggs from the leaves.
Rinse again. Chop the scallions. Soak the dried vermicelli in warm water until soft. Soak the dried shrimp in warm water until softened, then crush lightly.
– Crack two eggs into a bowl, add a little salt, and beat well. Heat oil in a pan, pour in the beaten eggs, stir-fry until they set, then transfer to a plate and set aside.
– Sauté the minced shallots in a pot until fragrant, then add the pea shoots. Stir-fry until the vegetables soften and turn a vibrant green, then add water.
– Bring the soup to a boil over high heat. Add the crushed shrimp, softened vermicelli, and cooked eggs. Cook for another 3 minutes, then season with salt, seasoning powder, and a little sesame oil. Remove from heat and serve.
