Nem rán is a traditional Vietnamese dish, especially popular during holidays and Lunar New Year celebrations. Known for its irresistible aroma and crunchy texture, this dish is a must-have on festive family trays. However, many home cooks often struggle with common problems such as watery filling, torn wrappers, or spring rolls that quickly turn soggy once cooled.

Below are some practical tips to help you make perfectly crispy, fragrant nem rán that stay golden and delicious for longer.

Tips to Prevent Watery Filling

To keep the filling dry, it’s important to balance the ingredients carefully. Avoid using too many vegetables that release a lot of water, such as jicama (củ đậu), bean sprouts, or kohlrabi. Using too little glass noodles, or soaking them until overly soft, can also cause excess moisture, leading to soggy spring rolls.

Mix Meat and Egg First

Always mix the minced meat with egg yolks first until well combined, then add the remaining ingredients. Avoid using egg whites, as they can make the filling watery after wrapping and frying. This step helps the filling bind better and stay firm.

Wrap and Fry Immediately

Once the filling is mixed, wrap the spring rolls right away and fry them as soon as possible. Letting the mixture sit for too long will cause vegetables to release more water.
