According to experts, this situation can be divided into four scenarios:

Scenario 1: If the rice has not been removed after cooking or the lid of the cooker hasn’t been opened, most bacteria will have been eliminated. Without opening the lid, bacteria cannot enter, posing no harm. Even though the water content and nutrients in the rice are suitable for bacterial growth once the power is off and the temperature drops, bacteria won’t develop in these conditions. In this case, the rice remains safe to eat, even overnight or longer.

Scenario 2: If you take out some hot rice right after cooking and then close the lid, the internal temperature of the cooker remains relatively high. Although opening the lid may introduce some bacteria, the high temperature inside will kill most of them. As the temperature gradually drops, fewer bacteria will survive or multiply within one night. Therefore, eating rice left overnight in this scenario is generally safe.

Scenario 3: If you’ve taken rice out to eat and it has cooled, but you used a clean spoon and the room was well-ventilated and hygienic, the bacteria that entered would be minimal. After one night, bacteria growth would still be limited. While not perfectly safe, eating this rice might not cause significant issues.

Scenario 4: If leftover rice was handled with utensils used during the meal or exposed to a less clean environment, then placed back in the cooker, bacteria would have already contaminated it. The humid and warm environment inside the cooker creates ideal conditions for bacterial growth. In this case, the rice is likely to spoil, especially during summer.
Conclusion:
If the rice remains in the cooker without opening the lid or if the lid is only briefly opened and closed again, it can be safe to eat and fairly hygienic. However, in the third and fourth scenarios, it’s better not to consume the rice.
