Chili peppers will lose their flavor when added to dishes, and rotten chili peppers will not be usable.

Choose chili peppers: Choose fresh chili peppers, bright color, smooth and firm. Also green and thick chili peppers. When you pick them up, they should be firm and juicy, not flattened or dented. These are newly picked chili peppers.

Steps to preserve fresh chili with cooking oil and plastic bottles
Step 1: Drain the chili from the outer skin: When you buy chili, you put it on a basket, rack, or tray so that the chili does not get wet on the outer skin. When wet, the chili will quickly rot. Discard the wilted ones. Avoid bruised ones.
Step 2: Remove part of the stem: Remove the wilted chili, use scissors to cut the stem short if the stem is long. You only leave the stem close to the tip of the fruit. If you leave the chili peppers long, they will rub against each other, causing scratches and making the chili spoil faster. However, you should not unscrew the knob because the tip of the chili will quickly spoil, allowing bacteria to enter the chili.

Step 3: Put the chili peppers in a plastic bottle: Add enough cooking oil to cover the surface of the chili peppers. Then put the chili peppers in used plastic bottles, such as mineral water bottles, used filtered water bottles, washed and left to dry. Then you close the lid tightly and put these chili bottles in the refrigerator, the chili will be fresh for half a year without losing water, spoiling or rotting. The plastic bottle helps keep the chili from evaporating. The layer of cooking oil creates a protective film to keep the water in the chili pulp. You can leave it in the refrigerator for 1-2 months without fear of spoiling or rotting.

Step 3: Put the chili in a specialized plastic zip bag: You put the chili in a specialized food storage plastic bag or storage box. Then put it in the refrigerator. With this method, the chili will stay plump all year long without being mushy. When you take it out, the chili will turn into ice. Use a knife or scissors to cut it and drop it directly into the dipping sauce bowl or dishes so that they will not be mushy and watery.
If you leave the chili in the refrigerator, it will rot because it is wet or will absorb all the water, creating dry chili. When added to sauces or dishes, the chili will be fragrant and have a different flavor than fresh chili.
